Vagetable Kare - Kare

Ingredients:


     3 tablespoons oil
     2 tablespoons atsuete
     8 pieces garlic, mince
     1 onion, sliced
     ¼ cup bagoong alamang
     3 eggplants, sliced
     2 bundies sitaw, cut into
     3 inch lengths
     1 small puso ng saging, sliced
     1/3 cup ground peanuts
     1/3 cup ground toasted rice
     1 ½ cups broth
Procedure:

In a saucepan, heat oil then adds the atsuete. Extract the color then remove the seeds. Sauté the garlic, onions and bagoong. Add in the vegetables. Stir-fry together with the ground peanuts and rice. Add broth and bring to a boul. Simmer until vegetables are cooked. Stir once in a while to prevent sticking.
