Ingredients:
3 tablespoon melted butter
¼ cup milk
½ cup chicken broth
1 tablespoon minced parsley (optional)
1 teaspoon kalamansi juice
1 tablespoon finely chopped onion
¼ teaspoon salt
2 cups cooked chicken
¼ cup Maya all-purpose flour
Coarsely shredded
1 cup breadcrumbs
1 egg, beaten with
2 tablespoons water
Oil for frying
Procedure:
In a saucepan, cook butter and flour. Gradually pour in the milk and broth. Cook until thick while stirring constantly. Add parsley, kalamansi juice and onion. Season to taste. Cool. Add chicken meat to cooled mixture. Mix well then chill for a few minutes. Shape into nuggets then roll in breadcrumbs. Dip in egg-water mixture then roll again in breadcrumbs. Fry in hot oil until golden brown.
